Ingredients
  1. 3/4 cup flour
  2. 1 cup fat free milk
  3. 1 egg
  4. 3 tbs melted light margarine
  5. 2 tbs light margarine
  6. 1/4 cup loganberries
Instructions
  1. Place flour, milk, eggs, and melted margarine into the blender. Blend for 30 seconds or until foam comes to the top. Let rest for 15 minutes.
  2. I recommend using a griddle pan with plenty of space, heat to medium high heat.
  3. Ladle or pour out 1/3 cup batter,. cook until the top appears firm and the bottom has brown spots, flip and cook until that side shows brown spots (about 1 minute)
  4. Mix together the 2 tbs of solid margarine with 1.5 tbs of the loganberries and place back into the fridge.
  5. Roll up the crepes and top with 1 tbs of the margarine loganberries mixture and 1 tbs of the plain loganberries.
  6. Sprinkle on powdered sugar and serve.
