Ingredients
- 3/4 cup flour
- 1 cup fat free milk
- 1 egg
- 3 tbs melted light margarine
- 2 tbs light margarine
- 1/4 cup loganberries
Instructions
- Place flour, milk, eggs, and melted margarine into the blender. Blend for 30 seconds or until foam comes to the top. Let rest for 15 minutes.
- I recommend using a griddle pan with plenty of space, heat to medium high heat.
- Ladle or pour out 1/3 cup batter,. cook until the top appears firm and the bottom has brown spots, flip and cook until that side shows brown spots (about 1 minute)
- Mix together the 2 tbs of solid margarine with 1.5 tbs of the loganberries and place back into the fridge.
- Roll up the crepes and top with 1 tbs of the margarine loganberries mixture and 1 tbs of the plain loganberries.
- Sprinkle on powdered sugar and serve.
